Never understood why Cray dosn't go off. as in food poisoning. Isn't it left in a sack in a river then put into jars and left on the shelf for months?

Glen:
Never tried it myself but my koro used to put his crayfish in a sack and hang it from a tree for a few days until it was rotten. Then all the meat would just fall out of the endoskeleton, sort of a darkish colour. He just ate it straight from the shell. |

One of Natures wonders eh.. I've known a few people who swear by it as a delicacy, one guy used to bring it into work for lunch alot.. Interesting as oysters/fish have a bench shelf life of a day or so..

Absolutely Glen but you still need an iron gut to hold down the rotten Crayfish, if it were a french delicacy the name would something like D'ouef pourri homard!! Then everybody would say "why that sounds so delicious, I must try it!!"

Yes pumpkin is right its actually fermented and not rotten. Fermented corn is better. Put corn in a sack in the river and leave to ferment for a few weeks. "Deouff pourri mais" = Rotten corn haha lol!

morning Hine Raumati, I am not sure, but didnt it all start with maori living inland from the coast, when they took their kai moana home after gathering on the coast, they would store in the stream to keep it fresh??????Although turi are only left in running fresh water to remove the slime, before drying like a normal eel

you should try deer brains hine, they are much sweater and firmer, more like a sweet bread,or tongues put in with a pork brawn, yeah forget tripe, and mountain oysters,as for the eyes, push them to the side, and eat the meat(muscle)that holds them in place,so tender, sweet and juicey
